Bresaola is our dried Beef. A product that originated from Italy in the region of Lombardy which is the Provence of Milano. Bresaola is a very delicate product with magnificent fragrance when sliced with a delicate flavour. We select yearling Beef eye rounds that are trimmed to size.
Our process for curing is with our traditional method using selected salts and spices. The product is then cured for over a week, our Bresaola is then formed and then cured again over an 8 week period in ambient temperature. The end result is perfection and unique to our region of Canberra, taking in all the flavours of Canberra and surrounded region that cannot be replicated.
